To celebrate the fifth anniversary of Nordia House, food experts Soile Anderson and Eleanor Ostman co-present how to make a Finnish Birthday Cake (Celebration Cake).
Using a versatile yellow sponge base, they will create three festive versions of the Celebration Cake, including berries and cream, chocolate mousse, and cloudberry.
Anderson and Ostman are the Finland National Foundation Lecturers of the Year. This class is co-sponsored by Finlandia Foundation National, Finlandia Foundation Columbia-Pacific Chapter, and Nordic Northwest.
Anderson is a native of Finland who relocated to the St. Paul, Minnesota area, where she opened The Deco Restaurant, Taste of Scandinavia bakeries, and the Finnish Bistro. She has been featured in Martha Stewart Living magazine, and in 2017 she was inducted into the Scandinavian American Hall of Fame.
Ostman is of Finnish descent and was born and raised in Hibbing, Minnesota. She studied journalism at Macalester College and was a food writer for the St. Paul Pioneer Press. She published two cookbooks, “Always on Sunday” and “Always on Sunday Revisited.”
Together, they authored, “Celebrations to Remember: Exceptional Party Decor and Fabulous Food.” Recipes include favorite Finnish foods, gravlax, and desserts. Their book will be available for purchase at the class.
