About

Join instructor Nick Maier of Skillcraft Institute for a cozy, delicious dive into Denmark’s beloved rugbrød – or sourdough rye bread. In this hands-on family class, you’ll learn Nick’s simple, hearty recipe featuring whole wheat, rye flour, seeds, and grains—the perfect base for the classic Danish open-faced sandwiches known as smørrebrød (yes… with lots of butter!).

Enjoy a snack of pre-made rugbrød while Nick guides you through mixing your own dough, caring for a sourdough starter, and mastering rye’s unique personality. You’ll head home with your dough rising in a pan to bake the next day in your oven, and a portion of whole wheat sourdough starter so you can keep the rugbrød tradition going!

A wonderful class for families who love food, Nordic traditions, and getting their hands doughy!

All ages welcome with adult supervision.

Baking pans: Rugbrød is traditionally baked in a pullman loaf pan, a straight-sided pan with a flat lid cover to achieve the squared loaf shape. Pullman loaf pans will be available for purchase in class from instructor for $13. Students are also welcome to bring their own regular bread pans from home. Upon registration students will receive information about pans, as well as containers to bring for sourdough starter.
